A couple years ago, I was invited to participate in a Soy Foods Tour in Des Moines, Iowa. It was like camp tofu! I had a fabulous time, and came home with lots of new friends and inspiration. I also got a tour of the Better Homes & Gardens test kitchen, test garden and prop room (filled with great dishes, cookware and linens used for their photoshoots). Needless to say I had a fantastic time!
One evening they had a local chef (originally from Hawaii, I think), cook us a gourmet feast using different soy products. The dinner was amazing, and one of the dishes that I requested the recipe for was Edamame Guacamole. Beyond being delicious, it was a great way to add some protein and flair to plain old guacamole.
