
I have been so excited about the release of this cookbook! Besides the fact that I was lucky enough to meet Amber Shea Crawley last summer at the Vida Vegan Blogger’s Conference, Amber’s recipes are super-delicious, easy to make, and she offers cooked options for those not necessarily looking to strictly follow a raw diet. As much as I love eating raw food, I don’t always love all of the extra labor that is often involved. I also love having the cooked options, so you can easily use an oven or a dehydrator.
Although I did receive a review copy of this book, it’s definitely one that I would have purchased. It’s the kind of book that you want to cook from. There’s nothing pretentious about Amber’s recipes, just delicious sounding and even more delicious tasting recipes, that are made from whole foods, fruits, nuts, seeds and vegetables. The kinds of foods that we should all be eating more of!
Amber has some great information in the beginning of the book, from making raw food quicker, easier and more affordable, to ingredients and equipment, how to make your own raw flours, how to stock your pantry, as well as a nutrition guide. What really caught my eye though, are the recipes, from breakfast, beverages, snacks and sides, to breads, dips, desserts, main dishes, cheeses, spreads & sauces. Everything looks fantastic. I was especially blown away by the whole chapter on kale chips, which I plan to cook my way through!
So far I’ve only had a chance to try a handful of the recipes, but they are keepers! I have the book tucked in my kitchen, because I know that I’ll be using it a lot this summer. The Maple Cinnamon Pecan Milk is delish, as well as Amber’s Date Nut Crumble (which is great sprinkled on top of Oatmeal or yogurt), Apple Pie Oatmeal, Kale Tahini Salad and Matt’s Salad Sprinkle. Crunchy Kimchi Wraps are next on the list!

I actually don’t have a ton of raw experience. I have tried some raw cashew chocolate cookies that are divine, and I’d love to try more. This cookbook sounds like just the ticket.

It’s hard to choose one, but one of my very favorites is a raw raspberry cheesecake. It’s divine! Even my non-vegan husband loves it! This book sounds so great!

I am truly addicted to Kale chips and have started creating all kinds of different flavours, always looking for more suggestions!! Also my favourite recipe at the moment is raw onion and carrot bread……again i have done variations adding beetroot and capsicum….soooooo good!!!!

Favorite summer raw dish is watermelon chunks, in season. Temps are above 100 for the 2nd consecutive day, and frozen watermelon is my go-to dish coming home out of the heat.
Otherwise, I’ll freeze chunks or pineapple, banana and strawberries, blend them in the Vitamix, divide into 1 cup containers, and keep in the freezer for a quick raw dessert. My adult sons like this for parties, with or without added rum.

A favorite raw dish of mine at this time is marvelously simple and delightful! This dish is of sweet, juicy blueberries, very rich and very healthy, rich in nutrients and antioxidants.
