Cranberry Cobbler with Lemon Glaze

November 19, 2018 By Julie Hasson

Gluten-Free + Vegan Cranberry Lemon Cobbler | Julie's Kitchenette

Cobblers are always one of my favorite quick desserts to make, especially this time of year. You’ve got to love a recipe that’s brimming with juicy fruit, and can be thrown together in minutes. Because, let’s be honest, this dessert is in a class all it’s own. It’s the perfect marriage between a luscious fruit pie and vanilla cake. Or in this case, a lemon cake.

So when I got to work creating a new Thanksgiving recipe for my segment on AM Northwest, this was the delicious outcome. I’ve made it several times since, and it gotten huge raves from everyone.

To be honest, what I love best about this cobbler is the lemon glaze. I was talking over this recipe idea with my son, before I started baking it, and I was asking if he any flavor ideas beyond the usual cranberry orange route. That’s when he looked at me and said “you know mom, I bet it would be amazing with lemon. I think a lemon glaze on top would be delicious.” He was absolutely right about that lemon glaze! It takes a cobbler to a whole different amazing realm. Seriously, why have I not been glazing my cobblers all along? My kids are pretty brilliant, if I do say so myself.

What I really like is how the sweet and tangy lemon glaze balances the tartness of the cranberries. You can make this without the glaze, but if you do I would toss some lemon zest with the cranberries, to give it a bit more zing. I’d also love to hear if you make it too.

Have a wonderful Thanksgiving!

xo Julie

Cranberry Cobbler With Lemon Glaze

Description

This dessert is so quick to make, and absolutely delicious! It’s also gluten-free and vegan too. The recipe is adapted from the bumble berry cobbler recipe in my cookbook Vegan Casseroles.

Scale

Ingredients

Cobbler:
3/4 cup granulated sugar, plus an additional tablespoon for sprinkling
1/2 cup sweet sorghum flour
1/4 cup superfine white rice flour
1/4 cup potato starch
1/2 teaspoon xanthan gum
2 teaspoons baking powder
1/8 teaspoon salt
3/4 cup soy milk or other non-dairy milk
1/3 cup vegan butter (like Earth Balance) or coconut oil, melted
2 teaspoons vanilla paste or extract
2 cups fresh or frozen cranberries

Glaze:
1 cup powdered sugar
About 1 1/2 tablespoons fresh lemon juice

Instructions

Grease a deep dish pie pan and set aside. Preheat the oven to 350°F.

Cobbler: In a large bowl, combine the sorghum flour, rice flour, potato starch, xanthan gum, granulated sugar, baking powder, and salt. Whisk well until combined. Stir in the milk, melted vegan butter, and vanilla. Whisk until smooth.

Pour mixture into the prepared pie pan. Scoop the berries fairly on top of the batter, and sprinkle with a spoonful of sugar.

Bake in the preheated oven for 50 to 60 minutes, or until golden and cooked all the way through, and you don’t see any wet batter in the center. Remove from oven to a rack.

Glaze: Once the cobbler is out of the oven, make the glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. You don’t want any lumps of powdered sugar. Drizzle the glaze over the top of the warm cobbler. You probably won’t need all of the glaze. Let cool and serve.

The cobbler can be made one day ahead.

Notes

This recipe works really well with the Julie’s Original all-purpose flour blend (1 cup in place of the sorghum flour, rice flour, potato starch and xanthan gum). If you are not gluten-free, you can use 1 cup all-purpose flour in place of the gluten-free flours and xanthan gum.

You definitely can use frozen cranberries! I’ll add that to the recipe now.
