After-School Snacks For Hungry Kids
I am excited to be on Julie’s Kitchenette! I am a huge fan of Julie, her delicious baking mixes, and fabulous cookbooks. It’s back-to-school, and if you have kids, that means snack time is about to attack! My kids are always on a rampage the minute I pick them up from school, like they haven’t eaten in days! In order to keep the hunger monster at bay, below are some quick and easy snacks that can be made in flash by you (or by little hands with a bit of prep from you). You can also prepare these easily for snacking on-the-go if you are shuttling straight from school to after-school sports and activities. As anything I make, I like to keep it fun and healthy. I hope you enjoy them!
These are super easy to make and kids love them. Cut up bit size pieces of apples, pineapple, or watermelon (I ask my kids what they’d like), and skewer onto sticks with strawberries and grapes.
Slice bagels and fill them with nut butters or vegan cream cheese and fruit (such as strawberries and banana). These also work well with hummus and veggies like cucumber and tomato.
Take your favorite gluten-free cracker (I like to use Trader Joe’s Rice Crackers) and spread hummus, cream cheese, or a nut butter over it. Top with another cracker. Eat and repeat!
Seasoned Popcorn Mix
For a savory blend, combine 4 cups of popcorn with 1 cup of almonds, and 1 cup of gluten-free cheerios. Sprinkle with nutritional yeast or vegan parmesan cheese.
For a sweet blend, combine 4 cups of popcorn with ¾ cup of dried fruit (cranberries and raisins work well), 1 cup of plantain chips, and 1 cup of peanuts. Sprinkle with cinnamon sugar.
Spread corn tortilla chips on a plate. Sprinkle black beans and olives over the chips. Top with Daiya cheddar shreds. Microwave for approximately 1 minute, just until cheese melts. Top with salsa and dive in!
