I can’t even tell you how excited I am about this new cookbook by Nicole Axworth and Lisa Pitman! It’s called DIY Vegan. Beyond the fact that I absolutely adore Nicole and Lisa, this cookbook is fabulous and filled to the rim with delicious recipes! I am so excited to be a part of their blog tour.
From the moment the book arrived in the mail, I couldn’t put it down. I honestly curled up on the couch with it for hours. Nicole and Lisa have some really creative and healthy spins on so many recipes, from crackers and cereals, to homemade cheeses, desserts, sauces, dressings, pancake and pizza mixes, savory vegan egg mix, puddings, snacks and more! These recipes are incredibly innovative and healthy at the same time. I am in serious awe over the Savory Egg Mix and sour cream & onion popcorn shaker, and that’s just for starters. Tonight I’m making the Ranch Dressing for the second time (so good!) and the pancake mix is on the menu for this weekend.
Plus, the recipes are all healthy! And if a recipe isn’t gluten-free, there is a gluten-free variation. This makes my heart sing!

- 1 tablespoon tamari
- 1 tablespoon vegan Worcestershire sauce, homemade (page 139) or store bought
- 2 teaspoons liquid smoke
- 2 teaspoons pure maple syrup
- 2 teaspoons olive oil (optional)
- ½ teaspoon apple cider vinegar
- ½ teaspoon smoked paprika
- 2 cups large coconut flakes
- Preheat the oven to 300°F. Line a baking sheet with parchment paper.
- In a medium bowl, combine the tamari, Worcestershire, liquid smoke, maple syrup, olive oil (if using), vinegar, and paprika and stir. Toss in the coconut flakes and stir until well coated and no liquid remains at the bottom of the bowl.
- Spread the coated coconut in a single layer over the prepared baking sheet. Bake for 18 to 20 minutes, stirring every 5 minutes. Watch carefully—the edges can burn quickly! Let cool on the baking sheet. Store in an airtight container at room temperature for up to 1 month.
- TRY THIS: If you’re looking to reduce your oil consumption, the natural fat in the coconut flakes make these delicious with or without the oil in the recipe. If you like things a little more on the salty side, add a sprinkle of salt once you lay out the coconut flakes on the baking sheet, before they go into the oven.
Totally simple – overnight oats!

I love to make my own sauces (BBQ, teriyaki, etc) and nut milks. Far easier than getting in my car and driving to a store.
My current go-to pantry items are pre-made (at home) tofu scramble mix to make my scrambling super quick and homemade cheesy-type sauces.
Eggs I want to try an egg sub!

Salad dressings. Now that I’ve started making my own (so easy!) I can’t ever see myself going back to buying the commercial stuff.
Coconut bacon, the only local store that carries it is often out of stock.

Simple but good: pan roasted nuts and seeds. I put them on/in everything.
