I can’t even tell you how excited I am about this new cookbook by Nicole Axworth and Lisa Pitman! It’s called DIY Vegan. Beyond the fact that I absolutely adore Nicole and Lisa, this cookbook is fabulous and filled to the rim with delicious recipes! I am so excited to be a part of their blog tour. 

From the moment the book arrived in the mail, I couldn’t put it down. I honestly curled up on the couch with it for hours. Nicole and Lisa have some really creative and healthy spins on so many recipes, from crackers and cereals, to homemade cheeses, desserts, sauces, dressings, pancake and pizza mixes, savory vegan egg mix, puddings, snacks and more! These recipes are incredibly innovative and healthy at the same time. I am in serious awe over the Savory Egg Mix and sour cream & onion popcorn shaker, and that’s just for starters. Tonight I’m making the Ranch Dressing for the second time (so good!) and the pancake mix is on the menu for this weekend. 

Plus, the recipes are all healthy! And if a recipe isn’t gluten-free, there is a gluten-free variation. This makes my heart sing!

Lucky for you all, Lisa, Nicole and their publishers are letting me share their recipe for coconut bacon (it’s delish!), and they are graciously letting me give away a copy of DIY Vegan to one lucky winner! You’ve just got to give these a try. We love to use them in vegan club sandwiches, in salads, or to coat an amazing Classic Cheese Ball (page 60). But if you’re someone who loves smoky, salty sweets, you can also add these as a topping to doughnuts, cookies, and brownies. P.S. One of our testers told us this recipe alone was worth the price of the book.

Ingredients
  1. 1 tablespoon tamari
  2. 1 tablespoon vegan Worcestershire sauce, homemade (page 139) or store bought
  3. 2 teaspoons liquid smoke
  4. 2 teaspoons pure maple syrup
  5. 2 teaspoons olive oil (optional)
  6. ½ teaspoon apple cider vinegar
  7. ½ teaspoon smoked paprika
  8. 2 cups large coconut flakes
Instructions
  1. Preheat the oven to 300°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the tamari, Worcestershire, liquid smoke, maple syrup, olive oil (if using), vinegar, and paprika and stir. Toss in the coconut flakes and stir until well coated and no liquid remains at the bottom of the bowl.
  3. Spread the coated coconut in a single layer over the prepared baking sheet. Bake for 18 to 20 minutes, stirring every 5 minutes. Watch carefully—the edges can burn quickly! Let cool on the baking sheet. Store in an airtight container at room temperature for up to 1 month.
Notes
  1. TRY THIS: If you’re looking to reduce your oil consumption, the natural fat in the coconut flakes make these delicious with or without the oil in the recipe. If you like things a little more on the salty side, add a sprinkle of salt once you lay out the coconut flakes on the baking sheet, before they go into the oven.

    I love to make my own sauces (BBQ, teriyaki, etc) and nut milks. Far easier than getting in my car and driving to a store.

    That coconut bacon recipe sounds wonderful! As for my favorite vegan pantry item, I have to go with canned beans. They’ve such a time saver when I forget to soak dried beans in advance!
