This is a very simple yet tangy and tasty vinaigrette that will keep in your fridge. You can put on just about anything.
- 2 T preserved lemon zest, minced
- 1 T minced shallot
- 1/2 cup champagne or muscat vinegar
- 1/2 cup extra virgin olive oil
- In a bowl, whisk together all of the ingredients. Toss vinaigrette with arugula or other lettuce and serve.
